Indoor Oven Bar-b-Que Leg Quarters


1/2 Cup   Olive Oil  
1 Tsp.   Minced Garlic

  1 Tsp.

  Celery Salt

  Chicken Leg Quarters  
   

1/8 Cup

  Olive Oil

 

1/8 Cup

  Sesame Oil  

1/8 Cup

  Butter

1/8 Cup

  Balsamic Vinegar

 

1/8 Cup

  Rice Vinegar

 

  1/8 Cup

  Cider Vinegar

 

Juice

  of 1/2 Lemon

 

1/4 Cup

  Honey

 

  1 Tblsp.

  Yellow Mustard

 

1 Tsp.

  Minced Garlic

 

2 Tblsp.

  Mixed Italian Seasoning

 

1/2 Tsp.

  Celery Salt

 

1/2 Tsp.

  Ground Pepper

 

1/2 Tsp.

  Salt  
 
  1. Spread olive oil and garlic evenly over bottom of a long baking pan with sides. (Lasagne pan works well.
  2. Rub cut side of chicken in oil and then flip over to skin side down.
  3. Sprinkle 1 Tsp. celery salt evenly over top of all pieces.
  4. Place on middle rack in overn (Bake 1 hour at 325 degrees).
  5. Now, prepare the sauce: Place all remaining ingredients in small pan. Bring to boil. Reduce heat and let simmer 5 minutes.
  6. Turn chicken to skin side up.
  7. Baste each chicken piece with 2 Tblsps. of sauce.
  8. Increase heat to 350 degrees and cook 10 minutes.
  9. Baste each chicken piece again with 2 Tablsps. sauce.
  10. Increase heat to 375 and cook 10 minutes.
  11. Baste chicken pieces again, using up all remaining sauce. Cook 10 minutes.
  12. Baste each chicken piece with pan drippings.
  13. Increase heat to 400 and cook 5 minutes or until nicely browned.
  14. Remove from oven. Immediately remove chicken from pan Spoon soft drippings onto chicken pieces.

    Ummm! This is always a hit!
